Freezer Friendly Chocolate Chip Cookies

I never appreciated the magnificent convenience of (homemade) freezer foods until having children. There are virtually no cons, and the ability to have essentially on-demand family meals made with ingredients you yourself laid eyes on is a pro; the ability to have a nice meal made quickly and passively is a definite pro!

However, I somehow dropped the ball on freezer desserts. As it turns out, homemade cookie dough freezes fantastically, allowing for freshly baked homemade cookies to be within fifteen minutes reach at all times. Now, we could argue about whether or not that is a good thing… but really… why? Cookies are wonderful and everyone knows it and really excellent cookies are even better.

We originally discovered this recipe on Smitten Kitchen, and it has slowly but surely become our go-to freezer cookie. It is heavy on the chocolate chips and light on cooking time, which means it doesn’t feel stale or frost bitten coming from the freezer. The recipe also makes around two dozen cookies, which is a nice size batch for frozen family desserts. It will last a good while and serve as a nice surprise treat for the kiddos with little continual effort on your part.

Freezer Friendly Chocolate Chip Cookies

Ingredients

  • 1 stick salted butter
  • 2 tablespoons white sugar
  • 1/4 cup turbinado sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups AP flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups bittersweet chocolate chunks you may use chocolate chips or chop 12 ounces solid chocolate as well

Instructions

Make Dough

  1. In the bowl of a stand mixer combine the butter and sugars. Beat until fluffy.

  2. Add in the egg and vanilla extract, mixing on low speed.

  3. In a medium bowl mix together the flour, baking soda, and salt.

  4. Using a rubber spatula, fold the dry ingredients into the sugar mixture until combined.

  5. Mix in the chopped chocolate chunks.

If freezing…

  1. Line a baking sheet with parchment paper. 

  2. Using a cookie scoop, portion out all the dough and freeze until set (~ 15 minutes).

  3. Store in the freezer in a freezer-rated plastic bag. When you are ready to eat follow baking instructions…

If baking immediately…

  1. Preheat the oven to 360F. Bake for 12 minutes and top with coarse finishing salt.
