Preheat the oven to 425 convection.
Chop all of the vegetables and set aside.
Place frozen tater tots in a 9x13 baking pan, and bake in the preheated oven for 15 minutes.
Add the garlic and stir. Cook for an additional 10 minutes.
Add the peppers and cook for an additional 5 minutes.
Add the cheeses and cook until melted, roughly 5 additional minutes.
Top with spices and any optional add-ons. Serve immediately.
