Pressure Cooker Sütlaç

Ingredients

  • 1 cup Basmati rice
  • 1 cup cold water
  • 1 cinnamon stick
  • 1 tablespoon butter
  • 1/4 teaspoon grated nutmeg
  • 2 cups milk, divided
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract

Instructions

  1. Rinse the rice and place it in the instant pot. Add in the water, butter, cinnamon, and nutmeg.

  2. Cook on high pressure for 3 minutes and then allow to natural release for 10 minutes.

  3. When the rice is done, add 1 1/2 cups of milk and all of the sugar. Stir together and turn the instant pot on sauté mode.

  4. In a small bowl, measure the remaining 1/2 cup milk, eggs, and vanilla. Whisk together and pour them into the rice mixture THROUGH a fine strainer. You can use the same strainer as you did to rinse the rice.

  5. Sauté until just boiling and then remove from heat. The pudding will thicken the more you let it sit, but it is ready to eat whenever.

  6. After refrigeration, reheat in the microwave or on the stovetop prior to serving.
