Ingredients

  • 1 cup AP flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup white or yellow cornmeal
  • 1/4 cup butter
  • 1 egg
  • 1 cup + 1 tablespoon milk

Instructions

  1. Whisk together the flour, sugar, baking powder, salt, and cornmeal in a large bowl.

  2. In a large, microwave-safe measuring cup, melt the butter.

  3. Add the milk to the butter, whisking.

  4. Add the egg to the other wet ingredients and whisk.

  5. Fold the wet ingredients into the dry ingredients using a rubber spatula until completely combined and the consistency of a thick batter.

  6. Preheat the oven to 375F and grease an 8x8 baking pan.

  7. Pour batter into the pan and bake about 25 minutes, or until the cake is cooked through and lightly browned on the edges. Serve immediately.

Recipe Notes

Recipe can be doubled and made in a 13x9 cake pan without any changes to baking temperature or time.
