Parmesan Flatbreads

Ingredients

  • 1 3/4 cups AP flour
  • 3/4 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/2 cup water
  • 1/3 cup olive oil
  • 1 cup grated parmesan cheese
  • 1/2 cup honey
  • fresh thyme (1 bunch)
  • maldon salt (optional)

Instructions

  1. Preheat the oven to 450F and place a pizza stone in the upper 1/3.

Make the dough

  1. Whisk together the flour, salt, and baking powder.

  2. Add the water and olive oil and stir with a spoon or rubber spatula until all the flour is moistened.

  3. Knead into a ball and work dough until it comes together completely and feels oily. (Not long!)

Roll out flatbreads

  1. Divide the dough into four equal pieces.

  2. Roll each piece out very thin on a sheet of parchment paper.

Bake and top

  1. Working with one flatbread at a time, bake on parchment paper and pizza stone for 5 minutes. Top generously with cheese, and bake an additional 5 minutes.

  2. After cheese is slightly browned, remove and drizzle well with honey. Sprinkle with fresh thyme and salt.

  3. Cut into rectangles and serve!
