Preheat the oven to 450F and place a pizza stone in the upper 1/3.
Whisk together the flour, salt, and baking powder.
Add the water and olive oil and stir with a spoon or rubber spatula until all the flour is moistened.
Knead into a ball and work dough until it comes together completely and feels oily. (Not long!)
Divide the dough into four equal pieces.
Roll each piece out very thin on a sheet of parchment paper.
Working with one flatbread at a time, bake on parchment paper and pizza stone for 5 minutes. Top generously with cheese, and bake an additional 5 minutes.
After cheese is slightly browned, remove and drizzle well with honey. Sprinkle with fresh thyme and salt.
Cut into rectangles and serve!
